Beef Wellington for Christmas

Wellingtons (Beef, Venison & Salmon)

Fillet of Irish beef wellington with a red wine jus. Glazed with Dijon mustard, wrapped in Parma ham and wild mushroom duxelles, covered with a crisp puff pastry.

Fillet of Wicklow venison wellington with a red wine and port jus, with juniper berries. Glazed with Dijon mustard, wrapped in Parma ham and wild mushroom duxelles, covered in a crisp puff pastry.

Fillet of Irish salmon wellington served with a lemon butter sauce. Seasoned with fresh herbs, wrapped in crepes and covered with crispy puff pastry.
